Ah, a very good entry Sir Henry! But Sweden never really had an "Independence Day" as we would maybe define it, like from another nation. But, in 1523, when Gustav Vasa was declared king, this was considered the foundation of Sweden as an independent state and the day, which is the 6th of June, is celebrated as the National Day up to now. This does make it not the right answer for what we are looking for. Sorry good Sir Henry!

Here is a new hint for you swashbucklers!

independence was gained more than 700 years ago
the parishes of the country are named largely after saints
agriculture is of utmost importance for the economy and abides by strict laws
cows play a significant role in that country
in 1902 the country celebrates the coronation of a king with a festival

England certainly fits most of the requirements, but it formed from regional groups more than gaining independance

The UK never had to become independent. Other nations had to do that from the UK! :D

But it has a founding date which is May 1, 1707. All in all, this goes against the 700 years independence hint. Sorry Phoenix, your are good at this game but better luck next time and thank you for being so active in Hornswaggle!
