Ah, a very good entry Sir Henry! But Sweden never really had an "Independence Day" as we would maybe define it, like from another nation. But, in 1523, when Gustav Vasa was declared king, this was considered the foundation of Sweden as an independent state and the day, which is the 6th of June, is celebrated as the National Day up to now. This does make it not the right answer for what we are looking for. Sorry good Sir Henry!

The territory of Portugal has been invaded, settled and fought over since prehistoric times! Talk about independence series! The official independence date is listed as June 24, 1128, which is the date it was founded. Which makes is viable for the 700 years hint. Here is the big BUT: It is not largely dependent on its agriculture and cows are not really that important in Portuguese society or laws. Unless we are talking about Bife a Portuguesa, which is absolutely amazing when you know where to get it!

agriculture is of utmost importance for the economy and abides by strict laws
cows play a significant role in that country
in 1902 the country celebrates the coronation of a king with a festival

The UK never had to become independent. Other nations had to do that from the UK!

Well, Netherlands or Wales
I just want to make sure if you are talking about absolute sovereignty or current form of government.
Because both country I listed gained their sovereignty in the 1200s.
